What Is the Difference Between Hopper Capacity and Cylinder Capacity?

When choosing a commercial ice cream machine, two terms you will often see are hopper capacity and cylinder capacity. They sound similar, but they refer to different parts of the machine.

Hopper capacity is the amount of liquid ice cream mix the machine can hold before freezing. The hopper is usually the tank at the top of the machine where the mix is stored before it enters the freezing system. A larger hopper means the machine can hold more mix, so it needs refilling less often during busy service.

Cylinder capacity is the amount of mix the machine can freeze at one time. The freezing cylinder is where the liquid mix is chilled, churned, and turned into soft serve, ice cream, frozen yoghurt, or gelato. A larger cylinder can usually help the machine recover faster and serve more consistently during high demand.

The simplest way to understand the difference is this: the hopper stores the liquid mix, while the cylinder freezes it into finished product.

For example, a machine with a 10-litre hopper and a 2-litre cylinder can hold 10 litres of mix, but only 2 litres are being frozen at any one time.

Both capacities matter when comparing commercial ice cream machines. Hopper capacity affects how often you need to refill the machine, while cylinder capacity affects production, recovery time, and serving consistency.

For small cafés or occasional dessert service, a lower capacity model may be enough. For ice cream parlours, dessert shops, restaurants, and busy venues, a machine with a good balance of hopper and cylinder capacity is usually the better choice.
